Due to the long weekend of baking we were feeling the need for a large dose of veggies! Luckily dinner the other night with roasted root veg and stirfried greens yielded a large dose of left-overs!
It’s amazing what a bit of curry paste and a spoon of natural yogurt can do.
Started cooking some rice on the hob. Whilst this was cooking, I quickly heated up some chopped onion, garlic, and added some fresh mushrooms. Sauteed these off for a few minutes before adding curry paste (It’s a make-do dinner- don’t judge!) and then adding the remaining vegetables. Cooked this off for 5 minutes to heat through before adding a handful of fresh spinach.
Served over hot rice; comforting yet nutritious fast-food! Mmmmm
