As of tomorrow, we have 3 months until we fly to sunny Mexico. Therefore it’s time we adjusted our eating habits & got back on the wagon (as it were!).
Todays dinner was an explosion of colour:
As part of my promise to Lee to eat more fish, we had beautiful mackerel fillets topped with orange slices and some mint leaves. This was cooked in the oven, and served with a couscous & chickpea greek style salad.
I often find salads a bit dull so this one consisted of yellow peppers, spring onions, tomatoes (only for Lee!), chickpeas, couscous, cucumber, crumbled feta & mint leaves with a little orange juice mixed with olive oil drizzled over! Delicious!
