Veggie delight- Sweet potato, lentil & spinach curry!!

I’ve previously mentioned that I love lentils right?

They are quick, cheap & nutritious. Lentils are high in protein and fibre as well as ridiculously filling. What’s not to love?

On my quest to make more pack lunches and avoid the work canteen I have been perusing the net & stumbled on this recipe:
Good Food: Curry goodness!

Anxious to give it a whirl I set about making the recipe with gusto but tripled the recipe so it used up a large sweet spud languishing in the cupboard & covered dinner & two days lunches for us both.

As I’m not that keen on fresh tomatoes I whacked in a tin of tomatoes and a squeeze of tomato puree too for good measure. I also used frozen spinach as it’s what we had in :0) Cooking is all about innovation & experimentation after all!

As I didn’t fancy naan breads with the curry I attempted a flat bread recipe & whilst edible they weren’t very pretty!

They were dead easy to make and went very well with the curry, because they are a plain flavour. You could potentially add nigella seeds to boost the flavour. Here are a few snaps of my lunch the next day.
